Domaine Petit Roy Hautes‑Côtes de Beaune Blanc 2021 is a white wine produced by Domaine Petit Roy in the Hautes‑Côtes de Beaune appellation of Burgundy, France. The wine is a single‑varietal Chardonnay, grown on vines planted in sandy–limestone soils, with vineyards cultivated biodynamically.
Winemaking is done with spontaneous fermentation using indigenous yeasts in used French oak barrels. The barrels had carried several previous wines, ensuring minimal new oak influence The wine is aged for around 15 months on its own lees, without fining, filtration, or sulfur additions.
