Maxime Crotet Bourgogne Aligoté “Vieilles Vignes” 2023 is a white wine crafted by Maxime Crotet in Beaune, Burgundy. It is a 100% Aligoté wine sourced from old-vine plantings
The winemaking process is rooted in natural techniques: after a gentle direct press, the juice settles in a temperature‑controlled tank for about 12 hours. The wine then undergoes spontaneous fermentation with indigenous yeasts in larger barrels. Batonnage is performed throughout alcoholic fermentation to keep the fine lees in suspension
The wine is aged for approximately 10 months in French oak with weekly topping up to maintain freshness. A very small amount of sulfur is added only at bottling, ensuring minimal intervention and preservation of the wine’s purity
