La Rumbera is crafted entirely from Pansa Blanca, sourced from various vineyards between 35 and 80 years old, planted in soils of white and pink granitic sands as well as quaternary alluvial terraces with fossils, at elevations ranging from 100 to 350 meters

At the winery 80% of the grapes are destemmed and pressed, while the remaining 20% are macerated with their skins for 5 days. Fermentation takes place in stainless-steel tanks with native yeasts, and the wine rests for 9 months on its fine lees in the same tanks. It is bottled without fining, stabilization, filtration, or added sulfur
