Domaine des Ourobores, Brice Glace 2023 White Wine

Domaine des Ourobores, Brice Glace 2023, Savagnin Ouillé is a single-varietal white wine made from Savagnin using the “Ouillé” method. Savagnin is the most important grape variety in Jura after Chardonnay. These particular grapes come from a friend’s vineyard with blue marl soils in Arbois. Produced by Nicolas-Julian Hibold, Jura, France.

The wine undergoes a very gentle direct pressing — without maceration — lasting between 5 and 12 hours, which imparts great texture to the wine. This is followed by 4 months of ageing in stainless steel tanks.
Finally, it spends two months in barrel, which is regularly topped up to replace evaporated wine (Ouillé method). The wine is unfiltered, with a minimal addition of sulfur.

Savory, creamy, and unmistakably characterful. Jura at its finest.
