Maxime Crotet “Passé Tout Grains” 2023 is a Bourgogne red wine crafted by Maxime Crotet in Beaune, Burgundy. Typically, this cuvée is a blend of Pinot Noir and Gamay—not a monovarietal—sourced from hand-harvested grapes in the Maranges Valley, often grown in old vines (such as 65 years old)
The grapes undergo spontaneous fermentation with indigenous yeasts, and whole-cluster fermentation or slight carbonic maceration is common to enhance fresh fruit expression. The wine is then aged for approximately 8 to 10 months in mostly neutral French oak barrels, preserving purity and freshness
