Eloi Cedo Novetat Total 1 Litro 2023 Red Wine
Eloi Cedo Novetat Total Rouge 2023 is a red wine produced by Eloi Cedo in Binissalem on the island of Palma de Mallorca.
It is a blend of 85% Callet (75% massal selection, 25% clonal selection) and 15% Montenegro.
The grapes are hand-harvested, with 50–75% destemmed depending on the type of vessel. Maceration lasts 15–20 days with daily “brassage” (manual foot treading), followed by alcoholic fermentation with native yeasts in plastic, concrete, and stainless steel tanks, and gentle pressing.
The wine is aged for 5 months in concrete and stainless steel tanks.
