Envinate La Santa de Ursula 2021 Red Wine
La Santa de Úrsula Tinto 2021 is a red wine produced by the Envínate in collaboration with local growers from Santiago del Teide, Tenerife. It is a multi-varietal wine made from Listán Negro (50%), Negramoll(48%), and Listán Blanco (2%).
The grapes come from three different volcanic soil plots in La Corujera, one located at around 350 meters above sea level and the other two at 600 meters.
Each plot was vinified separately with native yeasts, between 50% and 75%. Fermentation took place in plastic and concrete vats, with 20% of the wine undergoing carbonic maceration.
The vines are trained in low pergola systems, which protect the grapes from the strong sun. The wine was aged in 220-liter barrels for 8 months.
