Saisons Savigny-lès-Beaune 2023 Red Wine
Philippe Pacalet Pommard 2021 is a red wine produced by Philippe Pacalet under the A.O.C. Pommard in Burgundy, France. It is a single-varietal Pinot Noir from vineyards with an average age of 45 years, south-facing, planted on stony soils, and farmed biodynamically.
The whole clusters ferment for four weeks with indigenous yeasts and without temperature control, with pigeage (punch-down) carried out twice a day.
The wine then ferments and ages on its lees for 16 months in French oak barrels, without racking. A small dose of sulfur is added before bottling, and the wine is neither fined nor filtered.
