Bodegas Cota 45 UBE Paganilla Blanco 2024 is a white wine made by Ramiro Ibáñez in Sanlúcar de Barrameda, Cádiz.
The wine is a single-varietal Palomino from two plots located in the southern part of the Pago de Paganilla, around 2 kilometres from Miraflores Alta. The vines, around 45 years old, are planted on albariza soils.
The grapes are hand-harvested and the whole bunches are pressed in old 1,000–1,250-litre Jerez casks. The must ferments spontaneously, without temperature control, and the wine remains in the same casks for around 9 months, developing a layer of flor for several months, resulting in partial biological ageing. It is bottled without fortification.
