Chanterêves Bourgogne Aligoté Bas des Ees 2024 White Wine
Chanterêves Bourgogne Aligoté Bas Des Ees White 2024 is a white wine produced by Chanterêves, the project of Tomoko Kuriyama and Guillaume Bott, in Burgundy, France.
The wine is a 100% Aligoté sourced from vineyards located near Marey-lès-Fussey, on the border of the Hautes-Côtes de Nuits. The parcels sit at around 470 metres of altitude, a cool site that contributes freshness and precision to the wine.
After destemming and crushing, the grapes undergo a slow pressing cycle of approximately six hours. Fermentation takes place spontaneously with indigenous yeasts and a pied de cuve starter culture.
The wine is then aged for 10 to 12 months in used 228L and 600L oak barrels. After blending, it spends an additional 5 to 7 months ageing on its fine lees in stainless steel tanks
