The wine is a single-varietal Savagnin sourced from the Les Chassagnes vineyard in Pupillin, planted on the Jura's characteristic blue marl soils. This unique terroir gives the wine remarkable tension, depth and a pronounced mineral character, resulting in a precise, saline and energetic expression.
The grapes are harvested by hand and undergo spontaneous fermentation with indigenous yeasts. The wine is then aged in a large oak foudre following the ouillé method, with the barrels kept topped up to prevent oxidative ageing and preserve the purity of the Savagnin. It is bottled without fining, filtration or added sulphur.
