Jacques Lassaigne Vignes de Montgueux Sparkling Wine
Jacques Lassaigne Vignes de Montgueux has been one of the biggest promoters of Montgueux. This Champagne, made from 100% Chardonnay over 40 years old, comes from a chalky hill located west of Troyes.
No pesticides, fertilizers, or synthetic products are used in the vineyard. The presence of grass between the rows creates strong competition for nitrogen, contributing to the character of the vines. The wine is aged in both new and old barrels for between 12 and 24 months. The grapes are harvested by hand, and the final wine is an “assemblage” of 7 to 9 different parcels. A gentle pressing is followed by fermentation in 2,050-liter vats and oak barrels. It then ages on the lees in bottle for 1 to 5 years. Disgorgement is done manually (à la volée), with no added sulfur and no dosage.
