Celler de Roure Safra Tinto 2021
Celler del Roure Safrà 2021 is a red wine made by Celler del Roure in Moixent, Terres dels Alforins, D.O. Valencia, at around 600 metres above sea level.
It is made from 70% Mandó and 30% Arcos, two native Valencian varieties from organically farmed vineyards. The grapes are hand-harvested and fermented with indigenous yeasts, using a combination of stainless steel tanks and stone lagares, with approximately 30% whole bunches.
The wine is then aged for 6 months in old 2,800-litre underground clay amphorae, following Celler del Roure’s revival of traditional winemaking methods. The result is a fresh, light and fluid red with red fruit, herbal notes and pronounced acidity, with fine tannins and an elegant profile.
