François de Nicolay Côte d’Auxerre Tinto 2023 is a red wine made by François de Nicolay in Burgundy, France, within the Côte d’Auxerre.
It is a single-variety Pinot Noir made from grapes sourced from organically or biodynamically farmed vineyards in Côte d’Auxerre, in northern Burgundy. As a négociant, François de Nicolay works with small growers who share his philosophy, selecting the grapes and making the wines in his old cellar in Savigny-lès-Beaune.
The wine is made with minimal intervention, using spontaneous fermentation and native yeasts, with no pumping over, pumping, clarification or filtration. The winemaking and ageing are carried out to preserve the wine’s freshness and expression of terroir, avoiding unnecessary intervention.
