François de Nicolay Chablis 2023 White Wine
François de Nicolay Chablis Blanco 2023 is a white wine made by François de Nicolay in Chablis, Burgundy, France, within the Chablis A.O.C.
It is a single-variety Chardonnay made from grapes sourced from vineyards farmed organically or biodynamically. François de Nicolay works with small growers who share his philosophy, selecting the grapes and making the wines in his old cellar in Savigny-lès-Beaune.
The wine is made with minimal intervention, using spontaneous fermentation and native yeasts, with no pumping over, pumping, clarification or filtration. The winemaking and ageing are carried out with the aim of preserving the wine’s freshness and expression of terroir, avoiding unnecessary intervention
