Domaine Ganevat Vin Jaune 2016
Domaine Ganevat Vin Jaune 2016 is a white wine crafted by Jean-François Ganevat in the Jura.
It is a single-varietal Savagnin sourced from very old vines grown on clay-limestone soils at an average altitude of around 300 meters.
Fermentation occurs spontaneously with indigenous yeasts, followed by a long ageing period in 228L oak barrels for more than 9 years under a layer of flor, developing the characteristic style of Vin Jaune.
Unfined, unfiltered, and with no stabilization, this is a deeply complex and oxidative wine that reflects a minimal-intervention philosophy.
