Mas Candí Cap de Pardals Ancestral Espumoso 2022
Mas Candí Cap de Pardals Ancestral Sparkling 2022 is a sparkling wine produced by Mas Candí in the Penedès region.
The wine is a single-varietal Mandó. The grapes undergo a two-hour skin maceration in the press prior to pressing, giving the wine its delicate rosé color. Fermentation occurs spontaneously with native yeasts.
The wine is then bottled while fermentation is still ongoing, where it completes its fermentation in bottle. It undergoes 12 months of ageing on fine lees before disgorgement.
This wine is made following the ancestral method.
