Mas Candí Tinc Set Ancestral 2023 Rose Sparkling Wine
Mas Candí Tinc Set Ancestral Rosat 2023 is a sparkling rosé made from a blend of Macabeo, Parellada, and Xarel·lo, with a small percentage of Mandó. The grapes come from old vines planted on clay-limestone soils, farmed organically using biodynamic treatments. Harvesting is done manually.
In the winery, fermentation begins spontaneously with native yeasts in stainless steel tanks. Before fermentation is complete, the wine is bottled following the ancestral method, allowing it to finish fermenting in the bottle. A small percentage of Mandó is added at disgorgement, acting like a dosage, and finally, without any added sulfites, the wine rests on its fine lees for 8 months before release.
