Pascal Doquet Diapason Grand Cru Extra Brut is a Champagne made exclusively from Chardonnay grapes grown in Grand Cru vineyards located in the renowned Côte des Blancs region, specifically in Mesnil-Sur-Oger.
Pascal pays special attention to his vineyards, working according to biodynamic farming principles. The vineyard soils are composed of chalk.
The blend includes 55% of a perpetual reserve wine, which adds complexity to the final result. The ageing process takes place in oak barrels and stainless steel tanks, with the wine resting on its lees for at least 7 years, giving it both structure and complex aromas.
A Champagne of great freshness, offering floral notes and tart fruit.
