Domaine Simon Akashiro 2023 White Wine
Domaine Simon Bize Akashiro 2023 is a low-intervention wine made by Chisa Bize in Savigny-lès-Beaune, in the Côte de Beaune, Burgundy, France.
It is a blend of Chardonnay and Pinot Noir, in an approximate proportion of 90% Chardonnay and 10% Pinot Noir. The Chardonnay comes from the Les Champlains and Les Perrières plots and is direct-pressed. The Pinot Noir is incorporated through whole-cluster maceration for 2–3 weeks, with manual punch-downs.
Both components are aged for approximately 12 months in used French oak barrels. Afterwards, the Pinot Noir lees remain in tank for a further 5–6 months before being blended with the Chardonnay. No sulphur dioxide is added during the winemaking process
