Chateau Yvonne Saumur Champigny Tinto 2021
Château Yvonne Saumur Champigny Tinto 2021 is a red wine produced by Mathieu Vallée under the D.O. Anjou-Saumur. The wine is a single-varietal Cabernet Franc grown in Saumur-Champigny on a Tuffeau limestone terroir.
Vinification is carried out in 38-hectoliter tronconic vats with indigenous yeasts for 4 weeks. Malolactic fermentation and aging take place in a troglodyte cellar over 22 months.
The wine is aged for 12 months in barrels, 20% of which are new and the rest in large casks (foudres).
The wine is neither filtered nor stabilized.
