Giuseppe Cipolla Solfare Bianco 2023 is a white wine produced by Giuseppe Cipolla in Passofonduto, in the Platani Valley of Sicily. It is a blend of Grillo, Catarratto, and Zibibbo, sourced from vineyards ranging in age from 15 to 230 years. The vines are trained using the traditional Alberello system.
The wine undergoes spontaneous fermentation with indigenous yeasts, followed by 6 months of aging on the lees in stainless steel tanks.
It is bottled without fining, filtration, or stabilization.
