Luís Pérez La Escribana 2023 White Wine
Luis Pérez La Escribana White 2023 is a white wine produced by Luis Pérez winery within the Tierra de Cádiz Denomination of Origin. The wine is classified as a vino de pasto, a traditional term used in Cádiz for unfortified wines made in the style of sherry.
It is a single-varietal Palomino Fino sourced from one of Andalusia’s finest pagos, Macharnudo, characterized by its albariza soils. The vines are over 30 years old.
This wine undergoes biological aging under flor, but unlike a fortified sherry, it is not fortified.
The wine ferments spontaneously with native yeasts in temperature-controlled stainless steel tanks and is then aged in sherry casks on its lees.
