Nicolas Jacob Les Chazaux Chardonnay Blanco 2023 is a white wine produced by Nicolas Jacob in the Jura region.
It is a single-varietal Chardonnay
The grapes undergo direct pressing, followed by spontaneous fermentation with indigenous yeasts.
The wine is aged for 18 months in used 600L French oak barrels.
Nicolas worked for many years at Domaine Anne and François Ganevat, which has strongly influenced his style, particularly his preference for long ageing.
The wine is bottled without fining, filtration, or stabilization.
