Domaine Macle Côtes du Jura Chardonnay Sous Voile 2019 is a white wine made by Domaine Macle in Château-Chalon, Jura, France, under the Côtes du Jura appellation.
It is a single-variety Chardonnay, sourced from vineyards planted on blue marl and limestone soils. The grapes are hand-harvested and, after fermentation, the wine is aged for around 36 months in 225-litre oak barrels under a yeast veil, without topping up the barrels, following the traditional sous voile method of the Jura.
Produced in a very limited quantity of around 3,000 bottles, it clearly recalls Vin Jaune, although with a shorter ageing period and a somewhat lighter expression. A classic and gastronomic interpretation of Chardonnay from the Jura.
