Domaine Macle Côtes du Jura Tradition Sous Voile 2019 is a white wine made by Domaine Macle in Château-Chalon, Jura, France, under the Côtes du Jura appellation.
It is a blend of Chardonnay and Savagnin, generally around 80–85% Chardonnay and 15–20% Savagnin, sourced from traditionally farmed vineyards.
The grapes are hand-harvested, and the two varieties are fermented and aged separately in barrels, where they remain for around three years under a yeast veil and without topping up, before being blended.
It is one of Domaine Macle’s most traditional wines and, due to its ageing under veil, recalls the style of Vin Jaune, although with a considerably shorter ageing period.
