It is a single-variety Melon de Bourgogne, sourced from vines with an average age of 30 years in the Clos des Bouquinardières parcel, in the village of Clisson.
The vineyard is planted on gabbro, an igneous rock of magmatic origin, over a granite subsoil with quartz.
The domaine farms its vineyards biodynamically, with particular attention to soil life and the balance of each parcel. The grapes are directly pressed and undergo spontaneous fermentation with native yeasts.
The wine is then aged for around 18 months on its fine lees in underground tanks.
