Cati Ribot Son Llebre 2023 White Wine
Cati Ribot Son Llebre is a white wine made from a blend of Giro Ros, Malvasía, and Premsal Blanc, using grapes sourced from Santa Margalida on the island of Mallorca. The vineyards grow on Call Vermell soils, a distinctive type of pink clay.
The harvest is done manually. The Giro Ros undergoes partial maceration, while the other varieties are directly pressed. Fermentation takes place in different vessels: Giro Ros in concrete tanks, and the rest in stainless steel. The wine is then aged for six months in stainless steel tanks.
It is made following the principles of biodynamic agriculture and natural winemaking. The Malvasía and an intentionally early harvest contribute a distinctive acidity to the wine.
Son Llebre is a fresh, crisp natural wine.
