Patrick Desplats Epona 2022 White Wine
Patrick Desplats Épona 2022 is a natural wine made in Val-du-Layon, Anjou, in the Loire Valley, France.
It comes from a vineyard of approximately 1.3 hectares planted with more than 20 grape varieties, some of which are over 100 years old. The identified varieties include Chenin Blanc, Pineau d’Aunis and Grolleau, alongside Romorantin, Fief Gris, Gamay, Pinot Gris, Pinot Noir and Riesling, among others.
The grapes are hand-harvested and fermentation takes place spontaneously with indigenous yeasts in buried Georgian qvevris, where the grapes macerate on their skins for approximately one month. The wine is then aged for around six months in fibreglass tanks. It is bottled unfined and unfiltered, with no oenological additives.
