Phelan Farm Scythian 2022 White Wine
Phelan Farm Scythian Blanco 2022 is a white wine produced by Phelan Farm in Cambria, California, under the D.O. of Cucamonga Valley. The wine is a single-varietal Palomino Fino from very old vines (over 100 years old) planted on felsic volcanic-origin soils.
A skin-contact maceration is carried out for one week, followed by direct pressing. Fermentation takes place with indigenous yeasts in neutral oak barrels. It is then aged in casks over 100 years old that had previously contained Sherry. The wine is neither fined nor filtered, with a light addition of sulfur.
